  • 4 large russet potatoes
  • 68 slices thick-cut bacon
  • 1 ½ cups sharp cheddar cheese, shredded
  • 34 green onions, thinly sliced
  • ½ cup sour cream
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the russet potatoes thoroughly.
  3. Prick each potato several times with a fork.
  4. Bake the potatoes directly on the oven rack or a baking sheet for about 45-50 minutes until tender when pierced with a fork.
  5. Remove the potatoes and let them cool slightly until safe to handle but still warm.
  6. Slice each potato in half lengthwise. Using a spoon, carefully scoop out most of the flesh, leaving about a ¼-inch thick shell.
  7. Brush the potato skins with olive oil on both sides. Sprinkle with garlic powder, salt, and black pepper.
  8. Place the potato skins skin-side down on a baking sheet or wire rack. Bake for 10 minutes, then flip them skin-side up and bake another 10 minutes until crisp.
  9. While the skins bake, cook the bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble once cooled.
  10. Remove the skins from the oven and fill each with a generous spoonful of shredded cheddar and crumbled bacon.
  11. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  12. Garnish with sliced green onions and add a dollop of sour cream just before serving.

Notes
