Crispy Homemade Goldfish Crackers with Cheddar and Sea Salt

A simple and satisfying homemade snack that replicates the iconic crispy, cheesy Goldfish crackers with wholesome ingredients and no preservatives.

  • 1 ½ cups (170g) sharp cheddar cheese, finely grated
  • 2 cups (250g) all-purpose flour
  • ½ cup (115g) cold unsalted butter, cubed
  • 1 tsp sea salt (plus extra for sprinkling)
  • 34 tbsp cold water
  • Optional: pinch of smoked paprika or cayenne pepper

Instructions

  1. Grate the cheddar cheese using the fine side of a box grater and set aside.
  2. In a large bowl, whisk together the all-purpose flour and 1 tsp sea salt. Add optional spices if using.
  3. Add cold, cubed unsalted butter to the flour mixture and work it in with a pastry cutter or fingertips until the mixture resembles coarse crumbs with pea-sized bits of butter.
  4. Stir the grated cheddar into the flour-butter mixture until evenly combined.
  5. Slowly add 3 tablespoons of cold water, mixing gently to bring the dough together. Add a 4th tablespoon if needed, but do not overwork the dough.
  6. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  7. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  8. Roll the dough out on a lightly floured surface to about 1/8-inch (3 mm) thickness.
  9. Cut the dough into desired shapes using a small fish-shaped cookie cutter or a sharp knife. Place crackers on baking sheets spaced about ½ inch (1.3 cm) apart.
  10. Lightly sprinkle the tops of the crackers with a pinch of sea salt.
  11. Bake for 12-15 minutes, rotating pans halfway through, until crackers have golden edges and firm texture.
  12. Remove from oven and let cool on baking sheets for 10 minutes before transferring to a wire rack to cool completely.
