  • Alabama White Sauce:
  • 1 cup mayonnaise (full-fat preferred)
  • 1/4 cup apple cider vinegar
  • 1 tablespoon prepared horseradish
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder (or 1 clove fresh minced garlic)
  • Optional: 1/4 teaspoon cayenne pepper

Instructions

  1. Pat the chicken wings dry with paper towels to ensure crispiness.
  2. Toss wings in 2 tablespoons olive oil, then season generously with salt and black pepper.
  3. Let wings sit at room temperature for 15-20 minutes while preparing the sauce.
  4. In a medium bowl, whisk together mayonnaise, apple cider vinegar, horseradish, lemon juice, sugar, salt, black pepper, and garlic powder. Adjust seasoning to taste and stir in cayenne pepper if desired. Chill the sauce in the fridge.
  5. Preheat grill to medium-high heat (375°F to 400°F). Lightly oil the grill grates to prevent sticking.
  6. Arrange wings in a single layer on the grill. Cook for 20-25 minutes, turning every 5 minutes to ensure even char and crisp skin. Use a spray bottle of water to control flare-ups. Wings should reach an internal temperature of 165°F.
  7. Remove wings from grill and immediately toss gently in the Alabama white sauce to coat without losing crispness, or serve sauce on the side for dipping.
  8. Serve wings hot or warm with extra sauce and optional crisp sides like pickled cucumber salad or a light green salad.

Notes

Pat wings dry before seasoning to ensure crispiness. Turn wings every 4-5 minutes to avoid burning and promote even cooking. Toss wings in sauce just before serving to keep skin crispy. Sauce can be made a day ahead for better flavor. For extra crispy skin, dry-brine wings by salting and refrigerating uncovered for a few hours or overnight. Oven-baking is an alternative if no grill is available.
