  • 1/2 cup (100 g) popcorn kernels
  • 3 tablespoons (45 ml) vegetable oil or coconut oil
  • 1 cup (200 g) granulated sugar
  • 1/4 cup (60 ml) light corn syrup
  • 3 tablespoons (45 g) unsalted butter, melted
  • 1/4 teaspoon (1 g) baking soda
  • 1/2 teaspoon (3 g) salt
  • Assorted gel or liquid food coloring (red, blue, green, yellow), about 1/2 teaspoon each
  • 1 teaspoon (5 ml) vanilla extract (optional)

Instructions

  1. Heat 3 tablespoons (45 ml) of oil in a large heavy-bottomed pot over medium-high heat. Add 3 popcorn kernels and cover with a lid. Once they pop, add the remaining 1/2 cup (100 g) of kernels in an even layer. Cover and shake the pot occasionally to prevent burning. When popping slows to 2-3 seconds between pops, remove from heat. Transfer popcorn to a large bowl, discarding any unpopped kernels. (About 5 minutes)
  2. In a medium saucepan, combine 1 cup (200 g) granulated sugar, 1/4 cup (60 ml) light corn syrup, 3 tablespoons (45 g) melted unsalted butter, and 1/2 teaspoon (3 g) salt. Stir over medium heat until sugar dissolves. Clip in your candy thermometer and bring to a boil without stirring. Cook until the syrup reaches 300°F (149°C), the hard crack stage. (7–10 minutes)
  3. Remove the pan from heat immediately. Quickly stir in 1/4 teaspoon (1 g) baking soda and 1 teaspoon (5 ml) vanilla extract. The mixture will bubble up and lighten in color.
  4. Immediately pour the hot candy syrup into 4 small heatproof bowls. Stir in 1/2 teaspoon of different gel food coloring into each bowl (red, blue, green, yellow). Work fast to keep syrup pourable.
  5. Working quickly, drizzle each colored syrup over different sections of the popcorn in your large bowl. Use a spatula or wooden spoon to gently fold and toss the popcorn, distributing the candy syrup evenly without crushing the kernels. (3–5 minutes)
  6. Transfer the coated popcorn onto parchment-lined baking sheets in an even layer. Let cool completely at room temperature for about 30 minutes until the candy coating hardens and crisps.
  7. Once cooled, gently break apart any large clusters. Store in an airtight container to maintain crispness.

Notes

Use a candy thermometer to ensure the syrup reaches the hard crack stage (300°F/149°C) for a perfect crisp coating. Work quickly when coating the popcorn to prevent clumping. Avoid overmixing to keep popcorn kernels intact. Baking soda aerates the candy for a light texture. Cool popcorn on parchment or silicone mats to prevent sticking. Store in an airtight container at room temperature for up to 5 days. To refresh softened popcorn, warm in a 250°F (120°C) oven for 5-7 minutes.
