A quick and easy breakfast featuring crispy toasted everything bagels topped with creamy mashed avocado and perfectly cooked jammy eggs, seasoned with smoked paprika and flaky sea salt.

Ingredients

  • 1 large or 2 small everything bagels (preferably day old)
  • 1 medium ripe avocado
  • 2 large eggs per serving
  • 12 tablespoons extra virgin olive oil
  • Flaky sea salt (such as Maldon), to taste
  • Freshly ground black pepper, to taste
  • Pinch of smoked paprika
  • 1 teaspoon fresh lemon juice
  • Red pepper flakes (optional)
  • Optional add-ons: fresh herbs (chopped chives or parsley), everything bagel seasoning, cherry tomatoes (halved)

Instructions

  1. Slice the everything bagel in half (or quarters if small). Lightly brush or spray each piece with olive oil.
  2. Place bagel pieces under a broiler or in a toaster oven for about 3-5 minutes until golden and crispy around the edges. Watch carefully to prevent burning.
  3. Scoop out the ripe avocado into a bowl. Add fresh lemon juice, a pinch of salt, smoked paprika, and freshly ground black pepper. Mash with a fork until creamy but slightly chunky. Adjust seasoning to taste.
  4. Heat a non-stick skillet over medium-low heat and add a tablespoon of olive oil. Crack the eggs gently into the pan.
  5. Cook eggs slowly for about 3-4 minutes until whites are set but yolks remain soft and jammy. Cover the pan with a lid to help set the whites without overcooking the yolk. Avoid flipping the eggs.
  6. Spread a generous layer of mashed avocado on each crispy bagel piece.
  7. Carefully place a jammy egg on top of each avocado-covered bagel slice.
  8. Sprinkle with flaky sea salt and red pepper flakes if desired. Add fresh herbs or everything bagel seasoning for extra flavor.
  9. Serve immediately while the bagel is still crunchy and the egg yolk is runny.

Notes

Use day-old everything bagels for best crispiness. Cook eggs on low heat with a lid to achieve perfect jammy yolks. Add lemon juice to mashed avocado to prevent browning. For vegan version, substitute eggs with smoked tofu or chickpea scramble. Gluten-free option available using gluten-free bagels or bread.
