These crispy baked parmesan pork chops are a quick and easy weeknight dinner, ready in 30 minutes with a golden, crunchy crust and juicy meat. No deep frying required.

  • 4 boneless pork chops, about 1-inch thick
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 tablespoon Dijon mustard
  • 1 cup panko breadcrumbs
  • 1/2 cup freshly grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh parsley, chopped for garnish (optional)
  • Lemon wedges for serving (optional)
  • Extra grated parmesan for sprinkling (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Place a wire rack on a rimmed baking sheet and brush it lightly with olive oil.
  2. Pat the pork chops dry with paper towels. Season both sides lightly with salt and pepper.
  3. Set up your coating station: In the first shallow bowl, add the flour. In the second bowl, whisk together the eggs and Dijon mustard until smooth. In the third bowl, combine the panko breadcrumbs, grated parmesan, garlic powder, onion powder, paprika, Italian seasoning, salt, and pepper. Mix everything together with a fork.
  4. Working one at a time, dredge a pork chop in the flour, shaking off any excess. Then dip it into the egg mixture, letting any extra drip off. Finally, press it firmly into the panko-parmesan mixture, making sure both sides are fully coated.
  5. Place the coated chops on the prepared wire rack. Brush the tops lightly with olive oil.
  6. Bake for 15-18 minutes, flipping halfway through, until the coating is deep golden brown and crispy.
  7. Check for doneness: Insert an instant-read thermometer into the thickest part of a chop. You’re looking for 145°F (63°C).
  8. Let them rest for 3-5 minutes before serving.

Notes

For extra crunch, double-coat the pork chops (flour, egg, panko, then back into egg and panko). Use freshly grated parmesan for best melting. Do not crowd the baking sheet. Let chops rest before serving.
