These crispy baked buffalo cauliflower bites are crunchy on the outside, tender on the inside, and drenched in spicy-sweet buffalo sauce. Served with a creamy homemade ranch dip, they’re the perfect game-day appetizer that even cauliflower skeptics will love.

  • 1 large head of cauliflower, cut into bite-sized florets (about 45 cups)
  • 1/2 cup chickpea flour
  • 1/4 cup rice flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2/3 cup water (or more as needed)
  • 1 tablespoon olive oil
  • 1/2 cup hot sauce (Frank’s RedHot Original recommended)
  • 2 tablespoons unsalted butter, melted (or vegan butter)
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon apple cider vinegar
  • 1/2 cup plain Greek yogurt (full-fat or 2%)
  • 1/4 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • 12 tablespoons milk (or plant-based milk) to thin, if desired

Instructions

  1. Preheat your oven to 450°F (230°C). Place a rimmed baking sheet inside the oven while it preheats.
  2. Wash the head of cauliflower and cut it into bite-sized florets. Pat them dry with a clean kitchen towel.
  3. In a large mixing bowl, whisk together the chickpea flour, rice flour, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the water and olive oil, whisking until smooth. The batter should be thin enough to coat the back of a spoon.
  4. Add the cauliflower florets to the bowl with the batter. Use your hands or a spatula to toss gently until every floret is evenly coated.
  5. Carefully remove the hot baking sheet from the oven and line it with parchment paper. Place the battered florets in a single layer, leaving a little space between each one.
  6. Bake for 20 minutes. The florets should be starting to turn golden on the bottom edges.
  7. Remove the sheet from the oven and carefully flip each floret using tongs or a spatula. Return to the oven and bake for another 10-15 minutes, until the cauliflower is golden brown and crispy on the outside.
  8. While the cauliflower bakes, combine the hot sauce, melted butter, honey (or maple syrup), and apple cider vinegar in a small bowl. Whisk until smooth. Set aside.
  9. In another small bowl, combine the Greek yogurt, mayonnaise, lemon juice, dried dill, dried parsley, garlic powder, and onion powder. Stir until well blended. Add salt and pepper to taste. If the dip is too thick, stir in a tablespoon of milk at a time until it reaches your desired consistency. Refrigerate until ready to serve.
  10. Once the cauliflower is out of the oven, transfer it to a large bowl. Pour the buffalo sauce over the top and toss gently until every piece is coated.
  11. Serve immediately. Transfer the saucy cauliflower bites to a serving platter and serve hot with the ranch dip on the side. Garnish with chopped green onions or fresh parsley if desired.

Notes

Don’t skip preheating the baking sheet for maximum crispiness. Pat cauliflower dry before battering. Keep florets bite-sized (about golf ball size). Don’t overcrowd the pan. Toss with sauce right before serving to maintain crunch. For vegan version, use maple syrup and vegan butter in sauce, and plant-based yogurt and mayo in ranch. For air fryer, cook at 400°F for 12-15 minutes, shaking halfway through.
