These crispy air fryer buffalo cauliflower bites deliver a crunchy, spicy flavor with a creamy blue cheese dip, perfect as a healthy wing alternative or appetizer.

  • 1 medium head cauliflower, cut into bite-sized florets
  • 3/4 cup (95g) all-purpose flour
  • 3/4 cup (180ml) water
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup (120ml) buffalo sauce (hot sauce mixed with melted butter or vegan butter)
  • Olive oil spray
  • For the Blue Cheese Dip:
  • 1/2 cup (75g) blue cheese crumbles
  • 1/2 cup (120g) sour cream
  • 2 tbsp mayonnaise
  • 1 tsp lemon juice
  • 1/4 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Wash and dry 1 medium head of cauliflower, then cut into bite-sized florets about 1 to 1.5 inches.
  2. In a large bowl, whisk together 3/4 cup all-purpose flour, 3/4 cup water, 1 tsp garlic powder, 1 tsp paprika, salt, and pepper until smooth but thick enough to coat cauliflower.
  3. Toss cauliflower florets in the batter until fully coated. For extra crispiness, dip them a second time and shake off excess batter.
  4. Preheat air fryer to 400°F (200°C) for about 5 minutes.
  5. Place battered florets in a single layer in the air fryer basket, spray lightly with olive oil, and cook for 15-18 minutes, shaking halfway through until golden and crisp.
  6. While cauliflower cooks, melt 1/4 cup (60g) butter and mix with 1/2 cup (120ml) hot sauce to make buffalo sauce.
  7. Transfer cooked cauliflower to a large bowl, pour buffalo sauce over, and toss gently to coat.
  8. Optional: Return coated cauliflower to air fryer for another 3-5 minutes at 400°F (200°C) for a sticky glaze.
  9. In a small bowl, combine 1/2 cup blue cheese crumbles, 1/2 cup sour cream, 2 tbsp mayonnaise, 1 tsp lemon juice, 1/4 tsp garlic powder, salt, and pepper. Mix well.
  10. Serve buffalo cauliflower bites hot with blue cheese dip on the side.

Notes

Double-dip the batter for extra crispiness. Shake the air fryer basket halfway through cooking to prevent soggy spots. Use olive oil spray to help crisp the batter. For less spicy sauce, add more butter or a teaspoon of honey/maple syrup. Blue cheese dip can be made ahead and chilled. If no air fryer, bake at 425°F (220°C) for 25-30 minutes, flipping halfway.
