A quick and elegant grazing board featuring whipped ricotta cheese, fresh honeycomb, and seasonal fruit, perfect for effortless entertaining and last-minute gatherings.

Ingredients

Scale
  • 1 ½ cups (375g) whole milk ricotta cheese
  • ¼ cup (60ml) heavy cream, chilled
  • 34 ounces (85-113g) fresh honeycomb
  • About 2 cups (300g) seasonal fruit (e.g., figs, grapes, berries, apples)
  • Fresh herbs (optional, e.g., thyme or mint)
  • Crackers or rustic baguette slices for serving

Instructions

  1. Chill your mixing bowl and beaters in the fridge for 10-15 minutes before starting.
  2. In the chilled bowl, add ricotta cheese and heavy cream. Using a hand or stand mixer on medium speed, whip for 3-5 minutes until fluffy and smooth.
  3. Wash and dry seasonal fruit. Slice figs into quarters, halve grapes, or thinly slice apples.
  4. Spread the whipped ricotta generously on your serving board or platter using a spatula or knife.
  5. Break honeycomb into bite-sized chunks and scatter over the ricotta.
  6. Arrange the prepared fruit around the ricotta and honeycomb. Add crackers or baguette slices on the side.
  7. Optional: Garnish with fresh herbs like thyme or mint.
  8. Optional: Drizzle a little extra honey over the entire board for added sweetness and shine.

Notes

Chill your mixing bowl and beaters before whipping for best results. Drain ricotta if watery for creamier texture. Avoid overwhipping to prevent graininess. Fresh honeycomb is preferred for texture and flavor. Serve fresh at room temperature. Store leftovers in airtight container for up to 2 days.
