  • 1/2 cup (45 g) old-fashioned rolled oats
  • 1/2 cup (120 ml) milk (dairy or plant-based)
  • 2 oz (60 g) plain cream cheese, softened
  • 1/4 cup (60 g) Greek yogurt
  • 1/2 cup (75 g) fresh strawberries, chopped
  • 1 tablespoon (15 ml) honey or maple syrup
  • 1/2 teaspoon (2.5 ml) vanilla extract
  • 1/4 teaspoon lemon zest
  • 1/4 cup (30 g) graham crackers, crushed
  • 1 tablespoon (15 g) butter, melted

Instructions

  1. Soften the cream cheese by leaving it out for about 30 minutes until soft but not melted.
  2. In a medium mixing bowl, whisk the softened cream cheese and Greek yogurt together until smooth and lump-free.
  3. Slowly whisk in the milk, honey or maple syrup, vanilla extract, and lemon zest until creamy and slightly sweet.
  4. Fold in the rolled oats gently until evenly coated.
  5. Hull and chop the fresh strawberries into bite-size pieces. Fold half of the strawberries into the oat mixture, reserving the rest for topping.
  6. Spoon the oat mixture into 1 or 2 mason jars or small containers.
  7. Crush the graham crackers finely (but not to dust) and mix with melted butter until crumbs are evenly coated.
  8. Sprinkle the graham cracker crumble evenly over the oat jars, then add the remaining fresh strawberries on top.
  9. Seal the jars tightly and refrigerate for at least 6 hours or overnight.
  10. Serve chilled, stirring gently if desired.

Notes

Use certified gluten-free oats and gluten-free cookies or nuts instead of graham crackers for a gluten-free version. For dairy-free, substitute cream cheese and yogurt with coconut-based alternatives and use plant-based milk. Crush graham crackers by hand or with a rolling pin for better texture control. Add the crumble topping just before serving for maximum crunch. If cream cheese lumps, whisk longer or use an immersion blender. Drain excess liquid from frozen strawberries to avoid watery oats.
