Creamy Roasted Garlic Scape and White Bean Hummus

A silky, garlicky hummus with a twist of roasted garlic scapes and creamy white beans, perfect for snacks and quick to prepare.

Ingredients

  • 1.5 cups cooked or canned cannellini or great northern beans, drained and rinsed
  • 56 large garlic scapes, roughly chopped
  • 1 whole garlic bulb, roasted until soft and caramelized
  • 3 tablespoons extra virgin olive oil, plus extra for drizzling
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons tahini
  • ½ teaspoon sea salt, or to taste
  • ¼ teaspoon freshly cracked ground black pepper
  • 23 tablespoons water or aquafaba to thin the hummus

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice off the top of the garlic bulb to expose the cloves. Drizzle with a teaspoon of olive oil, wrap loosely in foil, and roast for about 35-40 minutes until soft and golden.
  3. Toss the chopped garlic scapes with a tablespoon of olive oil and a pinch of salt on a baking sheet. Roast alongside the garlic bulb for 15-20 minutes until tender and slightly browned.
  4. Let the roasted garlic and scapes cool at room temperature.
  5. Drain and rinse the white beans if using canned.
  6. Add beans, roasted garlic cloves (squeezed out), roasted garlic scapes, tahini, lemon juice, and 2 tablespoons olive oil into a food processor or blender.
  7. Pulse and blend, scraping down the sides as needed. Add water or aquafaba tablespoon by tablespoon until the mixture reaches a creamy, spreadable consistency (about 2-3 minutes).
  8. Season with salt and freshly cracked black pepper. Blend briefly again to mix.
  9. Taste and adjust seasoning with more lemon juice or olive oil if desired.
  10. Transfer to a bowl and serve immediately or chill for an hour to let flavors meld. Drizzle with olive oil and optionally sprinkle with smoked paprika or chopped fresh herbs.

Notes

If hummus is grainy or thick, add more water or aquafaba to smooth it without diluting flavor. Roasting garlic scapes alongside the bulb saves time and enhances flavor. Use freshly squeezed lemon juice for best brightness. Scrape down sides of processor frequently for uniform texture. Variations include adding cayenne for heat, fresh herbs for flavor, or roasted red peppers for sweetness.
