  • 1 medium ripe banana (about 100g mashed)
  • 2 tablespoons (32g) creamy peanut butter
  • 1 tablespoon (15ml) maple syrup
  • 1 tablespoon (12g) chia seeds (optional but recommended)
  • Pinch of salt
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Mash the banana: Peel one ripe banana and put it in your jar. Use a fork to mash it until mostly smooth with a few tiny lumps left.
  2. Add the peanut butter: Spoon in 2 tablespoons of creamy peanut butter. If cold and stiff, microwave for 10 seconds to loosen. Stir into the mashed banana until combined.
  3. Pour in the milk: Add 1/2 cup of your chosen milk. Stir until the banana-peanut butter paste dissolves into the milk.
  4. Add the oats and extras: Stir in 1/2 cup rolled oats, 1 tablespoon chia seeds (if using), 1 tablespoon maple syrup, a pinch of salt, and 1/2 teaspoon vanilla extract (if using). Mix until evenly combined and oats are submerged.
  5. Taste and adjust: Lick the spoon. Add more maple syrup or peanut butter if desired.
  6. Seal and refrigerate: Put the lid on the jar and refrigerate for at least 4 hours, but overnight (8-12 hours) is ideal.
  7. Serve cold or warm: In the morning, stir the oats. If too thick, add a splash of milk. Eat cold or microwave for 45-60 seconds. Top with sliced banana, a drizzle of peanut butter, or cinnamon if desired.

Notes

Mash the banana instead of slicing for even sweetness and creamy texture. Stir the oats again after 30 minutes in the fridge for even absorption. For a nut-free version, use sunflower seed butter or tahini. Oats stay good in the fridge for up to 4 days. Do not freeze.
