These creamy overnight peanut butter protein oats are a quick, high-protein breakfast that keeps you full until lunch. With simple ingredients and just five minutes of prep, this recipe is perfect for meal prep and busy mornings.

  • 1/2 cup (45g) rolled oats
  • 1/2 cup (120ml) milk of choice
  • 1/4 cup (60g) Greek yogurt
  • 1 tablespoon (12g) chia seeds
  • 1 scoop (about 30g) vanilla protein powder
  • 2 tablespoons (32g) creamy peanut butter
  • 1 tablespoon (15ml) honey or maple syrup
  • Pinch of sea salt
  • Optional toppings: chopped peanuts, dark chocolate chips, banana slices, cinnamon

Instructions

  1. In a jar or container, combine 1/2 cup milk, 1/4 cup Greek yogurt, 2 tablespoons creamy peanut butter, 1 tablespoon honey or maple syrup, a pinch of sea salt, and vanilla protein powder. Whisk or stir until smooth.
  2. Add 1/2 cup rolled oats and 1 tablespoon chia seeds. Stir until evenly distributed.
  3. Put the lid on the jar and shake vigorously for about 15 seconds. Open and stir again to ensure nothing is stuck at the bottom.
  4. Refrigerate overnight or for at least 4 hours.
  5. In the morning, stir the oats. If too thick, add a splash of milk; if too thin, add more chia seeds and let sit for 15 minutes.
  6. Add desired toppings and enjoy cold or at room temperature.

Notes

The mixture will look liquidy before refrigerating—that’s normal. For a nut-free version, use sunflower seed butter and oat milk. If you don’t have protein powder, increase Greek yogurt to 1/3 cup and add an extra tablespoon of peanut butter. Store in the fridge for up to 4 days. Do not freeze.
