A quick and easy no-cook breakfast featuring creamy overnight oats soaked in peanut butter and milk, topped with fresh berries for a nutritious and satisfying start to your day.

Ingredients

Scale
  • ½ cup (45 g) old-fashioned rolled oats
  • ½ cup (120 ml) milk of choice (whole milk or almond milk recommended)
  • 2 tablespoons (about 32 g) natural peanut butter
  • ¼ cup (60 g) Greek yogurt (plain or vanilla; can substitute dairy-free coconut yogurt)
  • 1 tablespoon (15 ml) honey or maple syrup (optional, adjust to taste)
  • ½ teaspoon (2.5 ml) vanilla extract
  • ½ cup (about 75 g) fresh berries (strawberries, blueberries, raspberries mix)
  • 1 teaspoon (5 g) chia seeds (optional)
  • Pinch of salt

Instructions

  1. Mix the peanut butter and milk: In your jar or bowl, combine 2 tablespoons (32 g) of peanut butter with ½ cup (120 ml) of milk. Stir vigorously using a spoon or small whisk until the peanut butter dissolves into a smooth, creamy mixture.
  2. Add the oats and chia seeds: Pour in ½ cup (45 g) of rolled oats and 1 teaspoon (5 g) chia seeds if using. Add a pinch of salt and stir well to combine everything thoroughly.
  3. Incorporate Greek yogurt and sweetener: Add ¼ cup (60 g) Greek yogurt and 1 tablespoon (15 ml) honey or maple syrup. Add ½ teaspoon (2.5 ml) vanilla extract for aroma. Mix gently but thoroughly.
  4. Top with fresh berries: Add ½ cup (about 75 g) fresh berries on top. You can slightly mash some berries for a natural jammy swirl or leave them whole for texture contrast.
  5. Seal and refrigerate: Close the jar or container tightly and refrigerate overnight, or for at least 6 hours.
  6. Serve chilled or warmed: In the morning, stir the oats well. Optionally microwave for 30-45 seconds if you prefer warm oats.

Notes

Stir peanut butter into milk thoroughly to avoid clumps. Use old-fashioned rolled oats for best texture. Layer berries on top to keep them fresh and prevent sogginess. Can be stored in fridge up to 3 days. Adjust thickness in the morning with extra milk or yogurt if needed. Microwave briefly if warm oats are preferred.
