  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 can (15 oz / 425g) pumpkin puree (not pumpkin pie filling)
  • 4 cups (960ml) low-sodium chicken broth
  • 1 cup (240ml) heavy cream
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground nutmeg
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley or chives for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add Italian sausage, breaking it up with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes. Transfer sausage to a plate with a slotted spoon, leaving about 2 tablespoons of rendered fat in the pot.
  2. Reduce heat to medium. Add diced onion and cook, stirring occasionally, until translucent and softened, about 3-4 minutes. Scrape up any browned bits from the bottom. Add minced garlic and cook for 30 seconds until fragrant.
  3. Stir in pumpkin puree, dried thyme, smoked paprika, and nutmeg. Cook for 2 minutes, stirring constantly, until spices are fragrant and mixture thickens.
  4. Slowly pour in chicken broth while stirring. Bring to a gentle boil, then reduce heat to low and simmer for 10 minutes, until slightly thickened.
  5. Stir in heavy cream and return browned sausage to the pot. Heat through for about 2 minutes. Do not let the soup boil after adding cream.
  6. Taste and adjust seasoning with salt and pepper. Ladle into bowls, garnish with fresh parsley or chives if desired, and serve hot.

Notes

Don’t rush the browning of the sausage for maximum flavor. Add cream to warm (not boiling) soup to prevent curdling. Soup thickens upon refrigeration; add a splash of broth or milk when reheating. For a dairy-free version, substitute full-fat coconut milk for heavy cream.
