  • ½ cup (75 grams) sun-dried tomatoes packed in oil
  • 1 cup (240 ml) heavy cream
  • 3 cloves garlic, minced
  • ½ cup (120 ml) low sodium chicken broth
  • ⅓ cup (30 grams) freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning (dried basil, oregano, thyme mix)
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • A handful of fresh basil leaves for garnish

Instructions

  1. Pat dry chicken breasts and season both sides with salt, pepper, and Italian seasoning. Let sit for 5 minutes.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Sear chicken breasts without crowding the pan for 5-6 minutes per side until golden brown and cooked through (165°F internal temperature). Remove and tent with foil.
  4. Lower heat to medium and add minced garlic and sun-dried tomatoes to the skillet. Stir constantly for 1-2 minutes until fragrant and softened.
  5. Deglaze the pan with chicken broth, scraping up browned bits. Simmer for 2 minutes to reduce slightly.
  6. Stir in heavy cream and Parmesan cheese. Whisk gently and simmer for about 5 minutes until sauce thickens, stirring occasionally. Add more broth or cream if too thick.
  7. Add red pepper flakes (if using), adjust salt and pepper, and toss in fresh basil leaves.
  8. Return chicken to the pan, nestle into the sauce, and simmer for 2-3 minutes to meld flavors.
  9. Serve chicken with sauce spooned over the top and garnish with additional basil if desired.

Notes

Do not overcrowd the pan when searing chicken to get a golden crust. Simmer sauce gently to avoid separation. Use a meat thermometer to avoid overcooking chicken. Fresh basil should be added at the end to preserve flavor. If sauce thickens too much, add a splash of broth or cream.
