  • 4 large russet potatoes (about 2 pounds / 900g), peeled and diced
  • 6 slices bacon, cooked until crisp and chopped
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 4 cups (950 ml) chicken broth, low sodium preferred
  • 1 cup (240 ml) heavy cream
  • 1 ½ cups shredded sharp cheddar cheese (about 150g)
  • ½ cup (120 ml) sour cream
  • 3 stalks green onions, sliced thin
  • Salt and freshly cracked black pepper to taste
  • Optional toppings: extra shredded cheese, chopped chives, crispy bacon bits, dollop of sour cream

Instructions

  1. Cook the bacon in a medium skillet over medium heat until crisp, about 6-8 minutes. Transfer to a paper towel-lined plate to drain and crumble once cool. Save about 1 tablespoon of bacon fat in the pan.
  2. Add diced onion to the bacon fat and cook for 3-4 minutes until translucent. Add minced garlic and cook for another 30 seconds until fragrant. Remove from heat.
  3. Peel and dice the russet potatoes into roughly 1-inch cubes, keeping them uniform for even cooking.
  4. Place the diced potatoes, sautéed onion and garlic, cooked bacon (reserve some for topping), and chicken broth into the slow cooker. Stir gently to combine.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until potatoes are fork-tender.
  6. Once potatoes are soft, use a potato masher or immersion blender to mash part of the potatoes, creating a creamy texture with some chunks left for texture.
  7. Stir in heavy cream, sour cream, and shredded cheddar cheese until melted and smooth.
  8. Taste and adjust seasoning with salt and pepper. Stir in sliced green onions and sprinkle reserved bacon and extra cheese on top before serving.

Notes

Do not add cheese too early to avoid grainy texture. If soup is too thick after adding cream and cheese, add a splash of broth or water to loosen. Cook bacon separately to keep it crisp. Partial mashing of potatoes adds rustic texture. Use sharp cheddar for best flavor. Taste before adding salt as broth and bacon add saltiness.
