Instructions

  1. Sauté the aromatics: Heat the oil in a large pot over medium heat. Add the diced onion and cook for 5-6 minutes, stirring occasionally, until soft and translucent. Add the minced garlic and grated ginger, and cook for another minute until fragrant.
  2. Toast the spices: Add the curry powder, cumin, turmeric, and cayenne (if using) to the pot. Stir constantly for about 30-60 seconds until the spices become fragrant. Be careful not to burn them.
  3. Add the pumpkin and liquids: Pour in the pumpkin puree, coconut milk, and vegetable broth. Stir until well combined. Add the maple syrup or brown sugar and stir again.
  4. Simmer: Bring the soup to a gentle boil, then reduce the heat to low and let it simmer for 15-20 minutes, stirring occasionally, until the flavors meld and the soup thickens slightly.
  5. Blend until smooth: Remove the pot from the heat. Using an immersion blender, blend the soup until completely smooth and velvety. If using a regular blender, work in batches and be careful with the hot liquid. Taste and adjust seasoning with salt and pepper.
  6. Finish and serve: Ladle the soup into bowls. Drizzle with extra coconut milk, sprinkle with toasted pumpkin seeds, and add fresh cilantro or parsley. Serve hot with crusty bread on the side.
