This creamy crockpot white chicken chili is rich, flavorful, and incredibly easy to make. With tender chicken, white beans, and a velvety broth, it’s the perfect comfort food for busy weeknights.

  • 1.5 pounds boneless, skinless chicken breasts
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 2 cans (4 oz each) diced green chiles
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (or to taste)
  • Salt and black pepper to taste
  • 8 oz cream cheese, softened and cut into cubes
  • 2 tablespoons cornstarch
  • 1/4 cup cold water
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil (for sautéing)

Instructions

  1. Heat 1 tablespoon olive oil in a medium skillet over medium heat. Add diced onion and cook until softened, about 5-6 minutes. Add minced garlic and cook for 30 seconds until fragrant. Transfer to slow cooker.
  2. Place chicken breasts in slow cooker on top of onion mixture. Sprinkle with cumin, oregano, chili powder, cayenne, salt, and pepper. Flip to coat both sides.
  3. Pour in chicken broth and add diced green chiles. Stir gently. Add drained and rinsed white beans and stir again.
  4. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until chicken is tender and shreds easily.
  5. Shred chicken directly in slow cooker using two forks. Stir shredded chicken back into broth.
  6. Add softened cream cheese cubes to slow cooker. Stir until fully melted and incorporated.
  7. In a small bowl, whisk cornstarch with cold water until smooth. Pour slurry into slow cooker and stir well. Cook on HIGH for 15-20 minutes (or LOW for 30 minutes) until thickened.
  8. Stir in fresh lime juice. Taste and adjust seasoning with more salt, pepper, or cayenne if needed.
  9. Ladle into bowls and serve with desired toppings.

Notes

For best results, use room-temperature cream cheese to avoid clumping. Sautéing aromatics is essential for depth of flavor. Chili tastes even better the next day. To freeze, portion into containers and store for up to 3 months.
