  • 2 large yellow onions, thinly sliced
  • 3 tablespoons unsalted butter

  • 1/4 cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (optional, for thickening)

Instructions

  1. Caramelize the onions: Melt the butter in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for about 15-20 minutes until soft and golden brown. Add the minced garlic in the last 2 minutes and cook until fragrant.
  2. Season and sear the pork chops: Pat the pork chops dry with paper towels. Season both sides generously with salt, pepper, onion powder, and smoked paprika. Heat a drizzle of oil in the same skillet over medium-high heat. Sear the pork chops for 2-3 minutes per side until golden brown.
  3. Deglaze the pan: After removing the pork chops, pour the chicken broth into the hot skillet. Use a wooden spoon to scrape up the browned bits from the bottom. Let it simmer for a minute, then remove from heat.
  4. Layer everything in the slow cooker: Spread half the caramelized onions in the bottom of the crockpot. Place the seared pork chops on top, then cover with the remaining onions. Pour the deglazed broth over everything.
  5. Mix the gravy base: In a small bowl, whisk together the cream of mushroom soup, heavy cream, Worcestershire sauce, and dried thyme. Pour this mixture over the pork chops and onions. Do not stir.
  6. Slow cook to perfection: Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the pork is fork-tender.
  7. Thicken the gravy (if needed): About 30 minutes before serving, check the gravy consistency. If too thin, stir in the cornstarch slurry and cook uncovered for the last 30 minutes.
  8. Rest and serve: Let the pork chops rest in the gravy for 5-10 minutes before serving. Spoon the gravy over each chop and serve immediately.

Notes

Don’t skip the sear or caramelizing the onions—they build deep flavor. Use bone-in pork chops for the juiciest results. If using boneless, reduce cooking time by 30 minutes. For a thicker gravy, add a cornstarch slurry at the end. Let the pork rest in the gravy before serving.
