  • 4 cups low-sodium chicken broth
  • 1 cup orzo pasta
  • 4 cups loosely packed fresh spinach
  • 3 cloves garlic, minced
  • 1 medium shallot, finely chopped
  • 1 cup heavy cream
  • 4 ounces cream cheese, softened
  • 1 teaspoon Italian seasoning
  • Pinch or two crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Add minced garlic and chopped shallot. Cook until softened and fragrant, about 3-4 minutes, stirring occasionally.
  2. Place chicken breasts at the bottom of the crockpot. Pour in chicken broth, then add sautéed garlic and shallots on top.
  3. Sprinkle Italian seasoning, salt, pepper, and crushed red pepper flakes if using. Stir gently to combine.
  4. Cover and cook on low for 3.5 to 4 hours until chicken is tender and easily shredded.
  5. Remove chicken breasts and shred with two forks. Return shredded chicken to the crockpot.
  6. Stir in orzo pasta and softened cream cheese. Cover and cook on low for another 30 minutes until orzo is tender but not mushy.
  7. Stir in fresh spinach and heavy cream. Let sit covered for about 5 minutes to wilt spinach and warm through.
  8. Taste and adjust salt and pepper as needed before serving.

Notes

Sautéing garlic and shallots before adding to the crockpot enhances flavor. Add orzo in the last 30 minutes to avoid mushiness. Use softened cream cheese to prevent lumps. Add spinach at the end to keep it vibrant and fresh. If soup is too thick after cooking, stir in extra broth or water.
