This creamy crockpot cheeseburger potato soup tastes exactly like a cheeseburger in a bowl. It’s rich, savory, and incredibly easy to make with simple ingredients.

  • 1 lb ground beef (80/20 is ideal)
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 4 medium Russet potatoes, peeled and cubed into 1-inch pieces
  • 3 cups low-sodium beef broth
  • 1 cup whole milk
  • 4 oz cream cheese, softened and cubed
  • 1½ cups sharp cheddar cheese, shredded
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon ketchup
  • Salt and black pepper to taste
  • Optional toppings: cooked and crumbled bacon, shredded cheddar, sliced green onions, diced pickles, sour cream

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat until no longer pink, about 6-8 minutes. Leave about a tablespoon of fat in the pan. Transfer beef to a plate and set aside.
  2. In the same skillet, sauté the diced onion for 3-4 minutes until soft and translucent. Add minced garlic and cook for 30 seconds until fragrant. Scrape up any browned bits from the bottom.
  3. Layer the cubed potatoes in the bottom of a 5-6 quart slow cooker. Top with the cooked ground beef and the onion-garlic mixture.
  4. Pour in beef broth, milk, Dijon mustard, Worcestershire sauce, and ketchup. Stir gently to combine. Season with a pinch of salt and pepper.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until potatoes are fork-tender.
  6. About 30 minutes before serving, add the softened cream cheese cubes and stir until fully melted and incorporated.
  7. Turn the slow cooker to warm or low heat. Add the shredded cheddar cheese a handful at a time, stirring gently after each addition until fully melted.
  8. Taste and adjust seasoning with more salt, pepper, or Worcestershire sauce if needed. For a thicker soup, mash some potatoes against the side of the slow cooker or use an immersion blender for a few pulses.
  9. Serve immediately with desired toppings.

Notes

Brown the beef well for best flavor. Use block cheese and shred it yourself to avoid graininess. Add dairy at the end and keep heat low to prevent curdling. Let cream cheese soften before adding. For a thicker soup, mash some potatoes or use an immersion blender.
