  • 1 cup whole milk (or 2%)
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional)
  • Pinch of nutmeg
  • 4 small sourdough or round artisan bread loaves
  • 2 tablespoons olive oil or melted butter
  • Optional: fresh parsley or chives for garnish

Instructions

  1. Heat a large skillet over medium heat. Add the butter and let it melt until foamy. Add the diced onion, carrot, and celery. Cook for 5-6 minutes until onions are translucent and carrots start to soften. Add the minced garlic and cook for another minute until fragrant.
  2. Sprinkle the flour over the sautéed vegetables. Stir constantly for about 2 minutes to cook out the raw flour taste. Slowly pour in the milk while whisking continuously to prevent lumps. Stir until the mixture thickens slightly, about 1-2 minutes.
  3. Pour the roux mixture into your slow cooker. Add the broccoli florets, broth, salt, pepper, smoked paprika, and nutmeg. Stir to combine.
  4. Cover the crockpot and set to LOW for 3-4 hours or HIGH for 1.5-2 hours, until the broccoli is tender but not mushy.
  5. Use an immersion blender to blend about half of the soup right in the crockpot, leaving some chunky bits for texture. Alternatively, transfer about 2 cups of soup to a regular blender, blend until smooth, and return to the crockpot.
  6. Stir in the heavy cream. Gradually add the shredded cheddar cheese, a handful at a time, stirring gently until each batch melts completely. Keep the crockpot on LOW for this step. Adjust salt and pepper to taste.
  7. Preheat oven to 375°F. Use a serrated knife to cut a circle out of the top of each bread loaf. Scoop out the soft inner bread, leaving about a 1/2-inch thick wall. Brush the inside and edges of each bread bowl with olive oil or melted butter. Place on a baking sheet and toast for 5-7 minutes until golden and crisp.
  8. Place each toasted bread bowl on a plate. Ladle the hot soup into the bowls. Garnish with fresh parsley or chives and extra shredded cheese if desired. Serve immediately with reserved bread scraps on the side.
