This creamy, savory beer cheese dip is made in the crockpot with minimal effort. It’s the perfect game day snack that stays smooth and delicious for hours.

  • 16 oz cream cheese, softened to room temperature
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 cup beer (lager or ale, not too hoppy)
  • 1/2 cup whole milk or half-and-half
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste

Instructions

  1. Take cream cheese out of fridge 30 minutes before starting to soften. Shred cheddar cheese. Measure out beer, milk, mustard, Worcestershire, and spices.
  2. Place softened cream cheese in the bottom of the crockpot. Add shredded cheddar on top, then pour beer and milk over everything. Add Dijon mustard, Worcestershire sauce, garlic powder, onion powder, and cayenne (if using). Do not stir.
  3. Cover and cook on low for 1 hour. Do not lift the lid.
  4. Remove lid and stir everything together with a rubber spatula for 2-3 minutes until the dip is glossy, smooth, and uniform in color. If too thick, add another tablespoon of milk. If too thin, cook uncovered for 10 more minutes.
  5. Taste and adjust seasoning with salt, pepper, or additional cayenne or Worcestershire as desired.
  6. Switch crockpot to warm setting. Dip will stay perfect for up to 3 hours. If it thickens, stir in a splash of warm milk. Garnish with fresh chives or smoked paprika if desired, then serve with dippers.

Notes

For best results, shred your own cheese and use room temperature cream cheese. Avoid IPAs as they can become bitter. The dip can be made ahead and kept warm for hours.
