  • 1/4 cup small-curd cottage cheese
  • 2 tablespoons milk or cream (optional)
  • 1 tablespoon unsalted butter
  • 1 to 1 1/2 teaspoons everything bagel seasoning

  • 2 slices good quality bread (sourdough or whole grain), toasted
  • Chopped fresh chives or parsley for garnish (optional)

Instructions

  1. Crack 4 large eggs into a mixing bowl. Add 1/4 cup small-curd cottage cheese and 2 tablespoons of milk or cream if using. Whisk gently until fairly uniform but with small curds visible. Season lightly with salt and pepper.
  2. Heat a non-stick skillet over medium-low heat. Add 1 tablespoon unsalted butter and let it melt slowly without browning, about 2 minutes.
  3. Pour the egg mixture into the warm pan. Let sit without stirring for 20-30 seconds until edges start to set.
  4. Using a silicone spatula, gently push eggs from edges toward the center, folding softly every 10-15 seconds. Cook for about 3-4 minutes until eggs are soft and creamy.
  5. When eggs are nearly cooked but still slightly wet, sprinkle 1 to 1 1/2 teaspoons everything bagel seasoning evenly over the eggs. Fold in gently once or twice to keep seasoning crunchy.
  6. Toast 2 slices of bread until golden and crisp using a toaster or oven at 350°F for 5-7 minutes. Optionally spread a thin layer of butter or olive oil on toast after toasting.
  7. Spoon the creamy scrambled eggs generously over the toasted bread slices. Garnish with extra everything bagel seasoning and chopped fresh chives or parsley if desired. Serve immediately.

Keep heat low and cook eggs slowly for creamy texture. Add everything bagel seasoning near the end to preserve crunch. Remove eggs from heat while still slightly wet to avoid dryness. Butter should foam but not brown. For dairy-free, substitute cottage cheese with plant-based ricotta or tofu ricotta. Use gluten-free bread for gluten-free option.
