  • 1 lb ground beef (85% lean)
  • 3 large bell peppers (red and green), diced finely
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth (low-sodium preferred)
  • 1 can (14.5 oz) diced tomatoes (fire-roasted optional)
  • ½ cup uncooked white rice
  • 4 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese (about 4 oz)
  • 1 tbsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Dice the bell peppers into small, even pieces. Chop the onion finely and mince the garlic.
  2. Heat olive oil in a large Dutch oven over medium-high heat. Add ground beef and cook until browned and no longer pink, about 7-8 minutes. Drain excess fat if more than 1 tablespoon remains.
  3. Add onions and diced bell peppers to the pot with the beef. Cook, stirring occasionally, until peppers soften and onions become translucent, about 5 minutes. Add garlic in the last minute to avoid burning.
  4. Pour in chicken broth and diced tomatoes with their juices. Stir in uncooked rice, Worcestershire sauce, Italian seasoning, salt, and pepper. Bring to a gentle boil.
  5. Reduce heat to low, cover, and simmer for 20 minutes until rice is tender, stirring occasionally to prevent sticking.
  6. Remove lid and add softened cream cheese in chunks. Stir until melted and silky. Then add shredded cheddar cheese and stir until fully melted and incorporated.
  7. Taste and adjust seasoning with more salt, pepper, or hot sauce if desired.
  8. Serve warm, garnished with fresh parsley or extra shredded cheese if desired.

Notes

Drain excess fat after browning beef to avoid greasy soup. Add cream cheese off heat or on very low heat to prevent curdling. Stir rice occasionally during simmer to prevent sticking. Freshly shred cheese for best melting results. If soup thickens after resting, stir in broth or water when reheating.
