  • ½ cup (120g) plain or vanilla Greek yogurt (dairy-free yogurt optional)
  • 1 medium apple, peeled and diced (Honeycrisp or Fuji recommended)
  • 2 tablespoons caramel sauce (homemade or store-bought)
  • ¼ cup (30g) chopped pecans, toasted
  • ¼ cup (30g) granola
  • ½ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • 1 tablespoon maple syrup (optional)
  • Pinch of salt

Instructions

  1. Toast the pecans: Heat a dry skillet over medium heat. Add chopped pecans and toast for 3–5 minutes, stirring frequently until nutty and slightly darker. Remove from heat and let cool.
  2. Prepare the apples: Peel and dice one medium apple into small pieces. Toss with ground cinnamon to infuse flavor and prevent browning.
  3. Mix the wet ingredients: In a medium bowl, whisk together milk, Greek yogurt, caramel sauce, vanilla extract, and a pinch of salt. Add maple syrup if desired for extra sweetness.
  4. Add oats and apples: Stir in rolled oats and cinnamon-coated apple pieces until well combined.
  5. Portion and refrigerate: Divide mixture evenly into two mason jars or airtight containers. Seal and refrigerate overnight or at least 6 hours.
  6. Serve: Stir oats well in the morning. Top each jar with granola and toasted pecans. Optionally drizzle extra caramel sauce on top.
  7. Enjoy cold or warm: Eat straight from the fridge or microwave for 30–45 seconds before adding granola and pecans if preferred warm.
