  • 1/3 cup unsalted butter, melted
  • 1/4 cup pure maple syrup
  • 1/4 cup brown sugar, packed
  • 2 large eggs, lightly beaten

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup pecans, chopped
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter, cold and cut into small cubes
  • 1 teaspoon ground cinnamon
  • Pinch of cayenne pepper (about 1/8 teaspoon)
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Cook the sweet potatoes: For richest flavor, roast them whole (pierced with a fork) on a baking sheet for 45-60 minutes until tender, then peel. Alternatively, peel and cube, then boil in salted water for 15-20 minutes until fork-tender; drain well.
  3. Mash the sweet potatoes in a large bowl until mostly smooth, leaving a few small chunks if desired.
  4. Add melted butter, maple syrup, brown sugar, beaten eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Stir until well combined.
  5. Spread the mixture evenly into the prepared baking dish.
  6. Make the pecan streusel: In a medium bowl, combine chopped pecans, flour, brown sugar, cinnamon, cayenne pepper, and salt. Add cold butter cubes and work into the dry ingredients with your fingers or a pastry cutter until the mixture resembles coarse crumbs.
  7. Sprinkle the streusel evenly over the sweet potato mixture. Do not press down.
  8. Bake for 25-30 minutes, until the streusel is golden brown and the casserole is bubbly around the edges. If browning too quickly, tent loosely with foil for the last 10 minutes.
  9. Let rest for 5-10 minutes before serving.

Notes

For make-ahead: Assemble casserole completely but do not bake. Cover and refrigerate for up to 24 hours. Add 10-15 minutes to baking time. If streusel gets soggy, broil for 1-2 minutes to crisp. To freeze: Assemble unbaked, wrap tightly, and freeze for up to 3 months. Thaw overnight in refrigerator before baking.
