This smoky three-bean chili is a one-pot wonder packed with deep, smoky heat from chipotle peppers and smoked paprika, topped with buttery, crunchy cornbread croutons. It’s a cozy, crowd-pleasing dinner that comes together in about 45 minutes using pantry staples.

  • 1 large yellow onion, diced (about 1 ½ cups)
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 tablespoons tomato paste
  • 12 chipotle peppers in adobo sauce, minced
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon unsweetened cocoa powder
  • 1 can (14.5 oz / 400g) fire-roasted diced tomatoes
  • 1 can (15 oz / 425g) black beans, drained and rinsed
  • 1 can (15 oz / 425g) kidney beans, drained and rinsed
  • 1 can (15 oz / 425g) pinto beans, drained and rinsed
  • 2 cups (480ml) vegetable broth, low-sodium preferred
  • 1 tablespoon brown sugar or maple syrup
  • Salt and black pepper to taste
  • 1 batch of your favorite cornbread, cooled and cut into 1-inch cubes (about 3 cups)
  • 2 tablespoons unsalted butter, melted
  • ¼ teaspoon smoked paprika
  • Flaky sea salt, for finishing

Instructions

  1. Preheat oven to 375°F (190°C). Cut cooled cornbread into 1-inch cubes. Spread on a rimmed baking sheet, drizzle with melted butter, sprinkle with ¼ teaspoon smoked paprika and a pinch of flaky salt, and toss gently. Bake for 10-12 minutes, stirring halfway, until golden and crisp on the outside but still soft in the center. Set aside to cool.
  2. Heat olive oil in a Dutch oven over medium heat. Add diced onion and cook for 5-6 minutes until softened and translucent. Add minced garlic and diced bell pepper, cook for 2 minutes until fragrant.
  3. Stir in tomato paste, minced chipotle peppers, smoked paprika, cumin, oregano, and cocoa powder. Cook for 1-2 minutes, stirring constantly, until the paste darkens and spices are toasted.
  4. Add fire-roasted diced tomatoes (with juices), drained and rinsed beans, vegetable broth, and brown sugar or maple syrup. Stir, scraping up any browned bits. Bring to a gentle boil, then reduce heat to low and simmer uncovered for 25-30 minutes, stirring occasionally. If too thick, add a splash more broth or water.
  5. Taste after 20 minutes and season with salt and pepper. Adjust heat with more chipotle or cayenne if desired. Balance acidity with a pinch of sugar or lime juice if needed. Simmer for remaining time.
  6. Ladle chili into bowls and top generously with cornbread croutons. Garnish with fresh cilantro, diced avocado, sour cream, or lime if desired. Serve immediately for maximum crunch.

Notes

Don’t skip blooming the spices—it unlocks their full flavor. Start with one chipotle pepper and add more to taste. Make croutons while chili simmers. If chili is too thin, mash some beans against the pot to thicken. Let chili rest 5 minutes before serving. Store croutons separately at room temperature for up to 2 days.
