  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (90g) chocolate chips (semi-sweet recommended)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 6-cup muffin tin with paper liners.
  2. In a large mixing bowl, mash the bananas with a fork until mostly smooth (a few lumps are fine).
  3. Pour the melted butter over the mashed bananas and stir until combined.
  4. Add the granulated sugar, room-temperature egg, and vanilla extract. Whisk until smooth and glossy.
  5. In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  6. Add the dry ingredients to the wet ingredients. Use a rubber spatula to gently fold until just combined—do not overmix. A few small lumps are fine.
  7. Fold in the chocolate chips with a few gentle strokes. Reserve about 1 tablespoon of chips to sprinkle on top if desired.
  8. Divide the batter evenly among the 6 muffin cups, filling each about 3/4 full. Press reserved chocolate chips into the tops if using.
  9. Bake for 18-22 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. Tops should be golden and spring back when lightly touched.
