  • ¼ cup old-fashioned rolled oats (25g)
  • ¼ cup all-purpose flour (30g)
  • ¼ cup brown sugar (50g), packed
  • ¼ teaspoon cinnamon
  • Pinch of salt
  • 3 tablespoons unsalted butter (42g), melted
  • Optional: 2 tablespoons chopped pecans or walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Place two 8-ounce ramekins on a small baking sheet.
  2. Peel, core, and slice apples into ¼-inch thick pieces (about 2 cups total).
  3. In a medium bowl, toss apple slices with granulated sugar, brown sugar, flour, cinnamon, nutmeg, salt, and lemon juice. Let sit for 5 minutes.
  4. In a small bowl, combine oats, flour, brown sugar, cinnamon, and salt. Stir with a fork. Pour melted butter over dry ingredients and mix until clumps form. Stir in nuts if using.
  5. Divide apple mixture evenly between ramekins. Spoon topping over apples, covering completely.
  6. Bake for 25-30 minutes, until filling is bubbly and topping is golden brown. If topping browns too quickly, tent with foil for last 5-10 minutes.
  7. Let cool on baking sheet for at least 10 minutes before serving.

Notes

Let apples macerate for 5 minutes to draw out juices. Use a baking sheet to catch overflow. For extra-crispy topping, broil for last 1-2 minutes. Can be assembled ahead and refrigerated for up to 24 hours before baking.
