This slow cooker turkey and wild rice soup is a set-it-and-forget-it comfort food that delivers perfectly chewy wild rice, tender turkey, and a creamy, herb-flecked broth with minimal effort.

  • 1 cup uncooked wild rice
  • 6 cups low-sodium chicken broth
  • 3 medium carrots, peeled and diced
  • 3 celery stalks, diced
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1/2 cup dry white wine (like Sauvignon Blanc or Pinot Grigio)
  • 1 cup half-and-half
  • 1 teaspoon salt (plus more to taste)
  • 1/2 teaspoon black pepper (plus more to taste)
  • Fresh parsley, chopped (optional garnish)
  • Crispy bacon bits (optional garnish)
  • Lemon juice (optional garnish)

Instructions

  1. Peel and dice the carrots, celery, and onion into roughly 1/2-inch pieces. Mince the garlic.
  2. Optional: Melt the butter in a large skillet over medium heat. Add the diced onion, carrots, and celery, and cook for 5 to 6 minutes until the onions are translucent and the vegetables start to soften. Add the minced garlic and cook for 30 seconds more, until fragrant.
  3. If you sautéed the vegetables, pour the white wine into the hot skillet. Use a wooden spoon to scrape up any browned bits. Let the wine simmer for 1 to 2 minutes until it reduces slightly. Pour the entire mixture into the slow cooker.
  4. Add the sautéed vegetables (or raw vegetables), shredded turkey, wild rice, chicken broth, dried thyme, rosemary, bay leaf, 1 teaspoon salt, and 1/2 teaspoon black pepper to the slow cooker. Stir to combine.
  5. Cover and cook on low for 7 to 8 hours, or on high for 4 to 6 hours, until the wild rice is tender and has split open.
  6. Remove the bay leaf. Stir in the half-and-half. Let the soup cook for another 10 to 15 minutes on low to warm the cream through. Adjust salt and pepper to taste.
  7. Ladle the soup into bowls. Garnish with fresh parsley, crispy bacon bits, or a squeeze of lemon juice if desired.

Notes

Do not rinse the wild rice; its natural starch helps thicken the soup. Add the cream at the end to prevent curdling. For a dairy-free version, use olive oil instead of butter and full-fat coconut milk instead of half-and-half. The soup freezes well for up to 3 months.
