  • 1.5 lbs boneless skinless chicken thighs
  • 1 cup uncooked wild rice
  • 1 medium yellow onion, diced
  • 3 medium carrots, diced
  • 3 stalks celery, diced
  • 4 cloves garlic, minced
  • 2 teaspoons dried sage
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 6 cups low sodium chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Melt the butter in a large skillet over medium heat. Add the diced onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened and the onion is translucent. Add the minced garlic and cook for one more minute until fragrant.
  2. Transfer the sautéed vegetables to a 5-6 quart slow cooker. Add the dried sage, dried thyme, bay leaves, and a generous pinch of salt and pepper. Stir to combine.
  3. Nestle the chicken thighs into the vegetable mixture. Pour the wild rice over and around the chicken.
  4. Slowly pour the chicken broth over everything. The liquid should cover the ingredients by about an inch. Add more broth or water if needed.
  5. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the rice is tender and the chicken shreds easily.
  6. Remove the chicken thighs to a cutting board. Use two forks to shred the meat into bite-sized pieces. Discard any fatty bits. Return the shredded chicken to the slow cooker.
  7. Pour in the heavy cream and stir gently. Let the soup cook for another 15-20 minutes on LOW to heat through. Do not boil after adding the cream.
  8. Remove the bay leaves. Taste and adjust salt and pepper as needed. Ladle into bowls and serve hot.

Notes

For a dairy-free version, use coconut cream instead of heavy cream and olive oil instead of butter. The soup thickens as it sits; add extra broth when reheating. Freeze before adding cream for best results.
