These roasted garlic mashed potatoes are ultra-creamy, garlicky, and deeply satisfying, with a mellow, sweet depth from roasted garlic. They come together in under 45 minutes and are perfect for weeknight dinners or holiday feasts.

  • 1 whole head of garlic
  • 1 teaspoon olive oil
  • A pinch of salt
  • 2 pounds Yukon Gold potatoes (about 6 medium potatoes)
  • 4 tablespoons unsalted butter, softened
  • ½ cup whole milk or heavy cream, warmed
  • ½ teaspoon salt
  • ¼ teaspoon black pepper, freshly ground
  • Optional: 2 tablespoons sour cream or cream cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Cut off the top quarter-inch of the garlic head to expose the cloves. Drizzle with olive oil and sprinkle with a pinch of salt. Wrap in aluminum foil and place on a baking sheet. Roast for 30-35 minutes, until cloves are soft and golden. Set aside to cool slightly.
  2. While the garlic roasts, peel the Yukon Gold potatoes and cut them into even 1-inch chunks. Rinse in cold water to remove excess starch.
  3. Place the potatoes in a large pot and cover with cold water by about an inch. Add a generous pinch of salt. Bring to a boil over high heat, then reduce to a simmer. Cook for 15-20 minutes, until fork-tender.
  4. Drain the potatoes well and let them sit in the colander for a minute or two to steam off excess moisture.
  5. Return the potatoes to the pot or transfer to a warm mixing bowl. Add the softened butter and let it melt. Squeeze the roasted garlic cloves out of their skins and add to the potatoes. Mash together with a potato masher or ricer until smooth and creamy.
  6. Warm the milk or cream in the microwave for about 30 seconds. Pour it into the potatoes slowly, stirring gently. Add salt and pepper. Taste and adjust seasoning. If using sour cream or cream cheese, stir it in now.
  7. Serve immediately, topped with a pat of butter and a sprinkle of fresh chives or parsley if desired.

Notes

Don’t overwork the potatoes to avoid a gluey texture. Warm your dairy before adding to prevent the potatoes from becoming dense. Salt the water generously for well-seasoned potatoes. Roast extra garlic for later use. Serve immediately for best texture; leftovers can be stored in the fridge for up to 4 days or frozen for up to 3 months.
