Ingredients

  • Rolled oats, 2 cups (180g)
  • Pumpkin puree, 1 cup (240g)
  • Milk, 1 cup (240ml)
  • Eggs, 2 large
  • Maple syrup, 1/3 cup (80ml)
  • Coconut oil or butter, 3 tablespoons (45g), melted
  • Vanilla extract, 1 teaspoon
  • Ground cinnamon, 2 teaspoons
  • Ground ginger, 1/2 teaspoon
  • Ground nutmeg, 1/4 teaspoon
  • Ground cloves, 1/4 teaspoon
  • Salt, 1/4 teaspoon
  • Chocolate chips, 1/2 cup (90g) (optional)
  • Chopped pecans or walnuts, 1/2 cup (60g) (optional)
  • Dried cranberries, 1/4 cup (40g) (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease it well with butter or cooking spray.
  2. In a large bowl, whisk together the pumpkin puree, milk, eggs, maple syrup, melted coconut oil (or butter), and vanilla extract until smooth.
  3. In a separate medium bowl, mix the rolled oats, cinnamon, ginger, nutmeg, cloves, and salt.
  4. Pour the dry ingredients into the wet ingredients and fold together with a rubber spatula until just combined. The batter will be loose and soupy.
  5. Let the batter sit for 5 minutes to allow the oats to absorb the liquid.
  6. If using mix-ins, fold them in gently after the 5-minute rest.
  7. Divide the batter evenly among the 12 muffin cups, filling each almost to the top.
  8. Bake for 18-22 minutes, until the tops are golden brown and a toothpick inserted into the center comes out clean.
  9. Let the cups cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  10. Store in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.

Notes

Let the oats soak for 5 minutes before baking for a creamier texture. Use room temperature ingredients to prevent coconut oil from seizing. These cups taste even better on day two as the flavors meld.
