Cozy Chicken and Wild Rice Soup

A rich, creamy chicken and wild rice soup loaded with tender chicken, fall vegetables, and a velvety broth. Perfect for chilly autumn evenings, this one-pot comfort food is hearty, satisfying, and even better the next day.

  • 1.5 lbs (680 g) boneless, skinless chicken thighs
  • 1 cup (180 g) wild rice blend
  • 1 medium yellow onion, diced
  • 3 medium carrots, peeled and diced
  • 3 celery stalks, diced
  • 4 garlic cloves, minced
  • 6 cups (1.4 L) low-sodium chicken broth
  • 1/2 cup (120 ml) heavy cream
  • 2 tablespoons (28 g) unsalted butter
  • 4 sprigs fresh thyme
  • 2 bay leaves
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Rinse 1 cup of wild rice blend under cold water for 30 seconds and set aside to drain.
  2. Dice onion, carrots, and celery into uniform 1/4-inch cubes. Mince garlic.
  3. Pat chicken thighs dry and season both sides with salt and pepper.
  4. Heat 1 tablespoon butter in a Dutch oven over medium-high heat. Sear chicken thighs for 4-5 minutes per side until golden brown. Transfer to a plate.
  5. Reduce heat to medium. Add remaining 1 tablespoon butter. Sauté onion, carrots, and celery for 6-8 minutes until softened. Scrape up browned bits.
  6. Stir in garlic, thyme sprigs, and bay leaves. Cook for 1 minute until fragrant.
  7. Pour in chicken broth and add rinsed wild rice. Stir to combine.
  8. Return chicken thighs to the pot. Bring to a gentle boil, then reduce heat to low, cover, and simmer for 40-45 minutes.
  9. Check rice for tenderness (should have a slight chew). If needed, simmer 5-10 minutes more.
  10. Remove chicken thighs and shred with two forks. Discard any fat or gristle.
  11. Return shredded chicken to pot. Remove and discard thyme sprigs and bay leaves.
  12. Stir in heavy cream. Adjust seasoning with salt and pepper.
  13. Simmer for 5 more minutes on low heat. Serve hot, garnished with fresh parsley.

Notes

For best results, season in layers and don’t add cream too early to avoid curdling. The soup thickens as it sits; add broth or water when reheating. It tastes even better the next day.
