This brown sugar pumpkin chai latte is a cozy, homemade alternative to coffee shop versions. It’s quick, easy, and made with simple ingredients for a velvety, spiced drink that tastes like a hug in a mug.

Ingredients

Scale
  • 2 cups water
  • 2 chai tea bags
  • 2 tablespoons brown sugar, packed
  • 1/4 cup pumpkin puree
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup milk of choice
  • Optional: 2 tablespoons heavy cream or coconut cream
  • Whipped cream (for topping)
  • Cinnamon stick or star anise (for garnish)
  • Extra brown sugar or cinnamon (for dusting)

Instructions

  1. Brew the chai concentrate: In a small saucepan, bring 2 cups of water to a gentle boil. Remove from heat, add the chai tea bags, and steep for 5-7 minutes. Remove tea bags and gently squeeze them into the pot.
  2. Whisk in the brown sugar and spices: While the chai is still hot, add the packed brown sugar, pumpkin pie spice, and a pinch of salt. Whisk until the sugar is completely dissolved.
  3. Add the pumpkin puree: Spoon in the pumpkin puree and whisk vigorously until smooth.
  4. Stir in the vanilla: Add the vanilla extract and stir to combine.
  5. Heat the milk: In a separate small saucepan, gently warm the milk over medium-low heat until steaming (do not boil). If using a frother, froth the milk until doubled in volume and foamy.
  6. Combine and serve: Pour the chai-pumpkin base into a mug, filling it about halfway. Slowly pour the warm milk over the top. If frothed, spoon the foam on top.
  7. Top and garnish: Add whipped cream, a dusting of extra brown sugar or cinnamon, and a cinnamon stick or star anise. Serve immediately.

Notes

For a dairy-free version, use oat milk or coconut milk. The chai-pumpkin base can be stored in the refrigerator for up to 3 days. Reheat gently on the stovetop. For extra foam, use whole milk or oat milk and heat to 150°F before frothing.
