  • 1 cup (120g) breadcrumbs (plain or Italian-style)
  • 1 medium onion, finely diced (about 1 cup)
  • 3 cloves garlic, minced
  • 2 large eggs
  • ½ cup (120ml) milk (whole or 2%)
  • 2 tablespoons Worcestershire sauce
  • ¼ cup (60ml) ketchup
  • 1½ teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ½ cup (100g) packed brown sugar (light or dark)
  • ½ cup (120ml) ketchup (for glaze)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan lightly with cooking spray or oil.
  2. In a small bowl, whisk together brown sugar, ½ cup ketchup, apple cider vinegar, Dijon mustard, and garlic powder for the glaze. Set aside.
  3. Optional: Sauté diced onion in a teaspoon of oil over medium heat for 3-4 minutes until translucent. Let cool.
  4. In a large mixing bowl, whisk together eggs, milk, Worcestershire sauce, and ¼ cup ketchup until well combined.
  5. Add breadcrumbs, onion, garlic, salt, pepper, thyme, and parsley to the bowl. Stir until just combined.
  6. Crumble ground beef into the bowl. Use your hands to gently mix until everything is evenly distributed (about 30 seconds). Do not overmix.
  7. Transfer meat mixture to the prepared loaf pan. Gently press into an even shape, forming a slight dome on top.
  8. Spoon about half of the glaze over the top of the meatloaf and spread evenly.
  9. Bake for 45 minutes on the middle rack.
  10. After 45 minutes, remove from oven and spoon remaining glaze over the top. Return to oven and bake for another 15-20 minutes.
  11. Check for doneness: internal temperature should reach 160°F (71°C) in the center. Juices should run clear.
  12. Let meatloaf rest in the pan for 10-15 minutes before slicing.
  13. Transfer to a cutting board, slice into 1-inch thick pieces, and serve warm.

Notes

For best results, use 80/20 ground beef to keep the meatloaf moist. Do not overmix the meat. Let the meatloaf rest for 10-15 minutes before slicing to allow juices to redistribute. If glaze browns too quickly, tent with foil. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
