Instructions

  1. In a large bowl, cream together 1 cup softened unsalted butter and 1 cup packed light brown sugar until light and fluffy, about 3-4 minutes with an electric mixer.
  2. Beat in 1 large egg and 1 teaspoon vanilla extract until combined.
  3. In a separate bowl, whisk together 2 ½ cups all-purpose flour, ½ teaspoon baking powder, and ½ teaspoon salt.
  4. Slowly add the dry ingredients to the wet mixture, mixing until just combined. Avoid overmixing.
  5. Shape the dough into a flat disk, wrap tightly with plastic wrap, and refrigerate for at least 30 minutes.
  6. While the dough chills, mix together ½ cup brown sugar, 2 teaspoons ground cinnamon, 2 tablespoons melted butter, 1 tablespoon heavy cream, and optional ½ teaspoon nutmeg in a small bowl until smooth and spreadable.
  7. Divide the chilled dough in half. On a lightly floured surface, roll one half into a ¼-inch thick rectangle about 9×12 inches.
  8. Transfer the dough to a parchment-lined baking sheet.
  9. Spread the cinnamon filling evenly over the dough, leaving a ½-inch border around the edges.
  10. Roll out the second half of dough to the same size and place it over the filling.
  11. Press gently around the edges to seal, then use a fork to crimp the edges tightly.
  12. Cut into 3×4 inch rectangles.
  13. Brush the tops of the cookies lightly with beaten egg white.
  14. Sprinkle coarse sugar or cinnamon sugar generously on top.
  15. Preheat oven to 350°F (175°C). Bake cookies for 18-20 minutes or until edges are golden and tops look set but still soft.
