  • 1/4 cup all-purpose flour (for streusel)

Instructions

  1. Grate 2 medium zucchinis using a box grater or food processor. Place shredded zucchini in a clean kitchen towel or cheesecloth and squeeze out excess moisture (about 5 minutes).
  2. In a light-colored skillet over medium heat, melt 1/2 cup unsalted butter. Stir frequently as it foams and milk solids brown, about 5 minutes, until nutty aroma and golden color develop. Remove from heat and let cool slightly.
  3. In a large bowl, whisk together granulated sugar, brown sugar, and browned butter until combined. Add eggs one at a time, whisking well after each, then stir in vanilla extract.
  4. In a separate bowl, sift or whisk together flour, baking soda, baking powder, cinnamon, and salt.
  5. Gradually add dry ingredients to wet ingredients, folding gently with a spatula until just combined. Avoid overmixing.
  6. Fold in grated zucchini and half of the chopped toasted walnuts (about 3/8 cup).
  7. In a small bowl, mix brown sugar, flour, and remaining toasted walnuts (3/8 cup) for the streusel topping. Sprinkle evenly over the batter in the loaf pan.
  8. Pour batter into a greased 9×5-inch loaf pan and smooth the top.
  9. Bake at 350°F (175°C) for 50-60 minutes. Check doneness with a toothpick; it should come out clean or with a few moist crumbs. Tent with foil if streusel browns too fast.
  10. Cool bread in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
