  • ½ cup brown sugar, packed

  • 3 tablespoons pure maple syrup
  • 1 tablespoon milk

Instructions

  1. Brown the butter: Cut the butter into pieces and place it in a light-colored saucepan over medium heat. Stir constantly with a rubber spatula. The butter will melt, foam, and then start to crackle. Keep stirring. After about 5-7 minutes, you will see golden brown specks form at the bottom and the butter will smell nutty. Remove it from the heat immediately and pour it into a heat-safe bowl to stop the cooking. Let it cool for 10 minutes.
  2. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with a circle of parchment paper.
  3. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.
  4. Combine the wet ingredients: In a large bowl, whisk together the cooled brown butter, granulated sugar, and brown sugar until well combined. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  5. Add the cider and applesauce: Pour in the apple cider and applesauce and whisk until smooth.
  6. Combine wet and dry: Add the dry ingredients to the wet ingredients in two additions, folding gently with a rubber spatula. Mix just until no streaks of flour remain. Do not overmix.
  7. Bake: Pour the batter into the prepared pan and smooth the top. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. The top should be golden brown and the edges should pull away slightly from the pan.
  8. Cool completely: Let the cake cool in the pan for 10 minutes, then turn it out onto a cooling rack. Remove the parchment paper. Let it cool completely before adding the glaze.
  9. Make the glaze: In a small bowl, whisk together the sifted powdered sugar, maple syrup, milk, and a pinch of salt. Whisk until smooth and pourable. Adjust consistency with more milk or powdered sugar if needed.
  10. Glaze and serve: Pour the glaze over the cooled cake and spread it gently to the edges. Let it set for about 10 minutes before slicing.

Notes

Watch the butter carefully when browning; it can burn quickly. Use room temperature eggs to prevent the brown butter from seizing. Do not overmix the batter. Let the cake cool completely before glazing to prevent the glaze from sliding off. The cake tastes even better the next day.
