Instructions

  1. Brown the butter: In a medium saucepan over medium heat, melt the butter. Stir continuously as it foams and then starts to brown with little brown specks and a nutty aroma (about 5-7 minutes). Remove from heat and let cool slightly.
  2. Mix sugars and eggs: In a large bowl, whisk together granulated sugar and light brown sugar. Add eggs one at a time, whisking well after each. Stir in vanilla extract.
  3. Combine wet and dry: Slowly pour the cooled brown butter into the sugar and egg mixture, stirring continuously to combine.
  4. Prepare dry ingredients: In another bowl, sift together flour, baking powder, and salt.
  5. Fold dry into wet: Gradually add the dry ingredients to the wet, folding gently with a spatula until just combined. Avoid overmixing.
  6. Add the apples: Fold in the diced apples evenly, coating them well in the batter to prevent sinking.
