  • 2 medium delicata squash
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese, plus more for garnish
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Position a rack in the middle of the oven.
  2. Wash the delicata squash thoroughly, pat dry, and trim off the ends. Slice crosswise into 1/2-inch thick rings. Scoop out the seeds and stringy pulp from the center of each ring.
  3. Place the squash rings in a mixing bowl. Drizzle with olive oil and add garlic powder, dried oregano, salt, and black pepper. Toss gently until evenly coated.
  4. Sprinkle the grated Parmesan over the seasoned rings and toss again gently to coat.
  5. Line a baking sheet with parchment paper. Arrange the squash rings in a single layer, not touching. Sprinkle any leftover cheese mixture over the rings.
  6. Bake for 12 minutes. Remove from oven, flip each ring carefully, and bake for another 10-12 minutes, until tender and the cheese is golden and crispy.
  7. Let cool on the sheet for 2 minutes. Transfer to a serving platter, garnish with fresh parsley and extra Parmesan. Serve immediately.

Notes

For extra crispy edges, broil for the last 1-2 minutes. Use freshly grated Parmesan for best results. Do not crowd the baking sheet to ensure crispiness.
