  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons packed brown sugar (light or dark)
  • 1 tablespoon granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt, plus more for sprinkling
  • ½ teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Rinse the pumpkin seeds in a colander under cold water, separating any clinging pumpkin guts. Shake off excess water, then pat gently with a paper towel until damp, not soaking wet.
  3. In a microwave-safe bowl, melt 3 tablespoons of unsalted butter (about 30 seconds on high). Let cool for a minute.
  4. To the melted butter, add 2 tablespoons packed brown sugar, 1 tablespoon granulated sugar, 1 teaspoon ground cinnamon, ¼ teaspoon salt, and ½ teaspoon vanilla extract if using. Whisk until combined and sugar is mostly dissolved.
  5. Add the damp pumpkin seeds to the bowl. Use a spatula to toss until every seed is coated. Use your hands for the last few tosses to work the coating into every crevice.
  6. Pour the coated seeds onto the prepared baking sheet. Spread into a single, even layer, keeping some small clusters for crunch.
  7. Bake for 12-15 minutes. Check at 12 minutes; seeds should be golden brown and coating bubbly and caramelized. If needed, bake another 2-3 minutes. Watch carefully to avoid burning.
  8. Remove from oven and let cool on the pan for at least 10 minutes. The coating will harden into a crispy shell as it cools.
  9. Once cool, break apart any large clusters with your hands. Sprinkle with a tiny pinch of flaky sea salt if desired.

Don’t boil the seeds first—the dampness from rinsing is enough. Watch the oven closely; seeds can burn quickly. Let cool completely for crunchiest texture. Double the batch as they disappear fast.
