  • 1/2 cup packed brown sugar (light or dark)

  • 1/4 cup heavy cream
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • Vanilla ice cream (optional for serving)
  • Whipped cream (optional for serving)
  • A sprinkle of cinnamon or nutmeg (optional for serving)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8 baking dish or line it with parchment paper.
  2. Core the apples using a melon baller or small spoon, leaving about 1/2 inch at the bottom to prevent leakage. Peel if desired.
  3. In a small bowl, combine granulated sugar, cinnamon, nutmeg (if using), and vanilla extract.
  4. Spoon about 1 tablespoon of the sugar mixture into the hollow of each apple. Reserve remaining mixture.
  5. Unroll crescent roll dough and separate into 8 triangles. Wrap each triangle around a stuffed apple, starting at the wide end and stretching gently to cover. Pinch seams to seal.
  6. In a small bowl, combine melted butter with remaining sugar-cinnamon mixture. Stir until sugar is mostly dissolved.
  7. Place wrapped apples in the prepared baking dish. Pour the butter mixture evenly over the tops of the dumplings.
  8. Bake for 30-35 minutes, until pastry is golden brown and apples are tender. Let cool in the dish for 5 minutes.
  9. While dumplings bake, make caramel sauce: In a small saucepan over medium heat, combine brown sugar, butter, and heavy cream. Stir constantly until butter is melted and sugar is dissolved, about 3-4 minutes. Bring to a gentle simmer and cook for 2 minutes. Remove from heat and stir in salt and vanilla.
  10. Serve warm dumplings drizzled with caramel sauce and topped with vanilla ice cream or whipped cream if desired.

Notes

For best results, use firm apples like Honeycrisp or Granny Smith. Let crescent roll dough sit at room temperature for 10 minutes before wrapping to prevent tearing. Double the caramel sauce if desired—it keeps in the fridge for up to two weeks. For a dairy-free version, use vegan butter and coconut cream.
