  • 1 large egg
  • 1/3 cup frozen peas
  • 23 stalks green onions, thinly sliced
  • 1 tablespoon creamy peanut butter

Instructions

  1. Bring 2 cups of water to a boil in a small pot (or microwave-safe bowl).
  2. Add the ramen noodle block and cook for about 2 minutes, separating the noodles as they soften.
  3. Reduce heat to low, then stir in 1 tablespoon creamy peanut butter until fully melted. Add about half the seasoning packet if desired.
  4. Add 1/3 cup frozen peas and cook for about 30 seconds until warmed through.
  5. Create a whirlpool in the broth, then gently slide the egg into the center. Cook undisturbed for 3 minutes for a runny yolk, or 4-5 minutes for a more set yolk.
  6. Pour everything into a serving bowl, keeping the egg intact.
  7. Top with sliced green onions and serve immediately.

Notes

For a microwave version: cook noodles in boiling water for 2 minutes in a microwave-safe bowl. Stir in peanut butter and seasoning. Add frozen peas. Crack egg on top and microwave for 45-60 seconds until white is set but yolk is runny. Don’t overcook the egg—a runny yolk creates a silky sauce. Use smooth peanut butter for best texture. Adjust salt by using half the seasoning packet.
