  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon pumpkin pie spice

  • 1/8 teaspoon xanthan gum (optional)
  • 1 cup cold brew concentrate
  • 1/2 cup water or milk (to taste)
  • Ice cubes

Instructions

  1. Make the pumpkin cream foam. In a small bowl or liquid measuring cup, combine the heavy cream, whole milk, pumpkin puree, maple syrup, vanilla extract, pumpkin pie spice, and a pinch of salt. If you’re using xanthan gum, sprinkle it in now. Whisk or froth until the mixture is thick and frothy, about 30-60 seconds. It should look like a thick, pourable cream — think of the texture of a milkshake. If it’s too thin, whisk it a little longer. If it’s too thick, add a splash more milk.
  2. Fill your glass with ice. Use a tall glass and fill it almost to the top with ice cubes. The more ice, the better. It keeps the drink cold and prevents the cream from sinking.
  3. Pour the cold brew. Pour the cold brew concentrate over the ice, then add the water or milk. Stir gently to combine. You want the coffee to be well-mixed before you add the cream.
  4. Layer the pumpkin cream. Slowly pour the pumpkin cream foam over the back of a spoon onto the top of the cold brew. This helps it float on top rather than sinking. Start in the center and work your way out. The cream should sit beautifully on top of the coffee.

Make the pumpkin cream foam right before serving. If your foam isn’t thickening, it might be because your cream isn’t cold enough. Don’t skip the salt.
