This incredibly moist and tender banana bread gets its signature tang and lift from buttermilk. It’s a foolproof, crowd-pleasing recipe that tastes like a slow Saturday morning.

  • 3 large or 4 medium ripe bananas, mashed (about 1 1/2 cups)
  • 1/2 cup buttermilk, room temperature
  • 1/2 cup (1 stick) unsalted butter, melted and slightly cooled
  • 3/4 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour, spooned and leveled
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1 cup optional add-ins: chopped pecans, walnuts, chocolate chips, or shredded coconut

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper, leaving overhang on the long sides.
  2. In a large bowl, mash the bananas with a potato masher or fork until mostly smooth with a few small lumps.
  3. Add melted butter, granulated sugar, and brown sugar to the bananas. Whisk until well combined and thick.
  4. Add eggs one at a time, whisking well after each. Then whisk in buttermilk and vanilla until smooth.
  5. In a medium bowl, whisk together flour, baking soda, and salt.
  6. Pour dry ingredients into wet ingredients. Fold gently with a rubber spatula or wooden spoon just until no streaks of flour remain. Do not overmix.
  7. If using, fold in add-ins with a few strokes.
  8. Pour batter into prepared pan and spread evenly. Tap pan on counter to release air bubbles.
  9. Bake for 55-65 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. If top browns too quickly, tent with foil after 40 minutes.
  10. Cool in pan on a wire rack for 15 minutes. Then lift out using parchment handles and cool completely on rack before slicing.

Notes

For best results, use overripe bananas (brown spots). Room temperature ingredients ensure even mixing. Do not overmix the batter to avoid a tough loaf. Cool completely before slicing to prevent crumbling.
