Instructions

  1. Make the Pie Crust: In a large bowl, whisk together flour and salt. Add cold, cubed butter and use a pastry cutter or fork to work it in until mixture resembles coarse crumbs with pea-sized bits of butter. Slowly add ice water, one tablespoon at a time, mixing gently until dough just comes together. Form into a disc, wrap in plastic, and chill in fridge for at least 30 minutes.
  2. Prepare the Blueberry Filling: In a medium bowl, combine blueberries, sugar, cornstarch, lemon juice, vanilla extract, and cinnamon. Gently toss to coat and let sit while preparing topping and crust.
  3. Make the Crumble Topping: Mix oats, brown sugar, flour, cinnamon, and salt in a bowl. Pour in melted butter and stir until mixture clumps together but remains crumbly.
