Ingredients

Scale
  • 2 cans (12.4 oz each) refrigerated cinnamon rolls with cream cheese frosting
  • 6 large eggs
  • 1 ½ cups whole milk
  • ½ cup heavy cream
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ cup brown sugar, packed
  • Pinch of salt
  • Reserved frosting from cinnamon rolls
  • 4 oz cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • ½ cup powdered sugar
  • ½ teaspoon vanilla extract
  • 12 tablespoons milk

Instructions

  1. Open both cans of cinnamon rolls. Set aside the two packets of cream cheese frosting. Cut each cinnamon roll into quarters (roughly 1-inch chunks).
  2. Lightly grease a 9×13-inch baking dish with butter or non-stick spray. Spread the cinnamon roll pieces evenly across the dish.
  3. In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, vanilla extract, ground cinnamon, nutmeg, brown sugar, and a pinch of salt. Whisk vigorously for about 1 minute until the sugar is mostly dissolved and the mixture is smooth and pale yellow.
  4. Slowly pour the custard mixture evenly over the cinnamon roll pieces. Use a spatula to gently press down on the rolls, ensuring every piece gets coated. Cover the dish tightly with plastic wrap and refrigerate for at least 8 hours, or up to 24 hours.
  5. The next morning, take the casserole out of the fridge and let it sit on the counter while the oven preheats to 350°F (175°C). Remove the plastic wrap.
  6. Bake for 40-45 minutes, or until the top is golden brown and the center is set. A knife inserted in the middle should come out clean, or the casserole jiggles only slightly when shaken. If the top is browning too quickly, tent loosely with foil for the last 10 minutes.
  7. While the casserole bakes, make the glaze. In a small saucepan over low heat, or in a microwave-safe bowl, combine the reserved cream cheese frosting packets, softened cream cheese, and softened butter. Heat gently, stirring frequently, until everything is melted and smooth. Remove from heat and whisk in the powdered sugar and vanilla extract. Add milk, one tablespoon at a time, until the glaze reaches a pourable consistency.
  8. Let the baked French toast cool for about 5 minutes. Drizzle the warm cream cheese glaze generously over the top. Use a spatula to spread it if needed. Serve warm.

Notes

Don’t skip the overnight soak; it ensures even texture. Use room temperature ingredients for best results. Cut the rolls evenly to avoid uneven cooking. Let the casserole rest before glazing to prevent the glaze from running off. The glaze can be made ahead and reheated.
